Oh wow…. Lots of minerality and water source on the nose with cooked agave slight citrus … some heat on the palate but agave sweetness and some fruitiness long finish, minerality disappears and leaves that citrus peel tast on the tongue… I’m sure this will be different when it opens up
A little disappointed compared to othe still Strengths coming out lately. I wanted to like this Pasote so much. Not bad, just not great. Medium heat, white pepper and citrus. The agave did not shine for me in this tequila.
NOM 1579 I've had this in the past when it was first introduced ? 2016? but I hadn't rated it. revisiting with a small sample cooked agave, hints of apple, pears, some barrel notes, not a lot of oak, which I like, a little heat on the end. well balanced

7.28.2023 - I lucked into finding two bottles of the NOM1579 version. This is, quite likely, the greatest bargain in the tequila industry. Such a quality drink, great enough to sip neat, priced to use as a quality mixer. Cooked agave, black pepper, minerality, all the qualities that are the hallmark of Felipe and NOM1579.
Calavera at Oakland airport. In a mezcal sifter. Nose - Vanilla heavy, but not saccharine, small oak, white chocolate. Slight uncooked agave at best. Taste - slight citrus on top of a bedrock of light pepper, herbs, and vanilla bean. Beautifully balanced, easy and not overwhelming barrel/ bourbon, which is a major bonus for me.
