I can smell the cooked agave, sweet oak and a floral note. I then taste agave, toasted oak, caramel, spicy vanilla and some smoke in the midpalate. The finish is nice. There is pepper and a viscous mouthfeel which helps the finish to slightly linger. Overall the Anejo is the most complex of the 3 expressions. It’s complex but nowhere close to overwhelming. Well done Insólito! 2nd tasting - Half bottle The bottle opened up some and I increased the rating by a 2 points. Salud!

Tasting Date: 7/22722 Lots of oak and usual bourbon notes on the nose, nothing out of the ordinary. Not getting much agave here but it is present. Flavor and finish are much of the same. Nothing blowing my socks off but better than most new craft bourbons.

Has a slightly sweet vanilla aroma and light caramel taste with a nice finish. Not at sweet as some anejo brands which I find is a plus.
