this was my favorite of the three Siembra XA that I tried. this is for the 2014 year bottle. Aroma - sweet caramel /cooked agave says yellow as it enters your mouth. then comes on a little peppery heat, some dark fruit (plum) I really like the way this smells. makes it so I can't wait to taste. Taste- starts out sweet just like the nose. sweet agave says yellow on this one with a little vanilla and caramel mixes in then light pepper comes in and leaves pretty quicly followed by some light oak. doesn't end as bitter as the Suro and pinera. finish: dry with a light oaky, earthy bitterness. not a lot just enough to balance out the initial sweetness. This is my favorite of the three siembra Azul XAs. I could definitely see this as an after dinner drink.
