Aroma: Deep butterscotch and caramel, although overall a lighter aroma, very pleasant. Taste: Similar to the aroma, with complex flavors of butterscotch and caramel, as well as oak and spice, with a depth that reminiscent of a high quality bourbon. A very slight sweetness that is perfectly balanced. Finish: Very smooth on the way down, with a slight bit of bite that fully brings out flavors of vanilla and cinnamon. Overall: An amazing tequila that is worth the price. This is the extra añejo to judge others by.

Aroma : Oak, vanilla, caramel, dried fruit. Some whiskey influence too like butter and almond. Taste : Medium bodied and somewhat oily. Lots of oak here, some cooked agave, and more whiskey. Some cinnamon and baking spice, and honey. Finish : Long and slightly bitter. Some more oak here and light agave and a little more honey. Much like the Añejo you can definitely have some appreciation for this if you happen to like bourbon as well.

The initial aroma is pure oak but with just a little time a much more complex aroma emerges. After a bit of time, butterscotch and a range of fruit flavors (apple, banana) emerge. The flavor is rich and sweet with butterscotch and baking spice. The finish is slightly tannic and lasts a good, long time. Very nice. 12/24/2015

Blind tasted. In spite the fact this sample taste and smell over oaked to me, I find myself going over it again and again. In fact it's quite balanced and smooth with a nice little agave and oak finish. Maybe just a bit artificially sweetened, but not in a bothersome way. It's really a good XA with a reasonable price, I just wish it had less oak presence.

Strong vanilla aroma. Honey flavor. I also get more of a sense of aged oak flavor for this extra-Añejo than on 1-4. The finish is interesting. The longer I sit with the finish, the more nuanced it gets and the more flavors I taste. At first the finish is a bit too peppery, but as it fades, it leaves a buttery mouthfeel that tastes slightly oaky, vanilla with a hint of cherry.

Agave, pepper, spice and alcohol aromas. Flavor is a bit sweeter then the aroma implies. But it is for sure peppery and woodsy. Warm lingering finish with lots of wood but still a bit of agave sweetness till the end.

Rated blind. Deep Amber with long, persistent thin legs. Nose of sweet toasted oak, but also a bit hot with alcohol at the top of the glass. Enters sweet, thin and smooth, with a hint of agave, but a lot of sweet bourbon oak. Medium finish that is fairly dry. This is probably too sweet and bourbon-y for me. Actually, I'd consider this a nice alternative to bourbon, but it's not what I look for in my tequila. I'd drink it again if someone else was buying, but it's not a favorite.

It's not something I traditionally remark on but the color of this XA is ruby red. The aroma is very heavy with chocolate, oak and a slight hint of almond. The flavor, however, hints on one particular note... Oak. There's also a lot of pepper and a bit of vanilla. The finish is very strong and lingers for a while. Another solid XA and at this price point a good deal.

The darkness of the extra añejo is a hint you’re in for a treat and the hint does not disappoint. Although the aroma is very alcoholic forward the tasty is reminiscent of hickory. It’s a sweet smokey finish is pungent and peppery upfront but mellows into a nice smooth finish that almost feels like you’ve swallowed a tablespoon of honey. I’m looking forward to trying this again!

I'm a big fan of Don Pilar tequilas. So it goes without saying that I was excited when I heard that they were releasing an extra anejo tequila.
