Tasted at the distillery on BAT in the cava. This is a new NOM that seems to be doing things the right way. Agave are sourced from Guanajuato. Añejo is aged to no more than 16 months in former Maker's Mark barrels plus I saw some other Beam product barrels in the warehouse.

Nose: Lightly oaked. Barrel vanillin. Crisp citrus and minerals. The smell of sun warmed river rocks after a rain. Ripe dark berries. Perfumed guayabas, plump and ready to pick off the tree. A warm fusion of baking spices. Flavor: A dramatic punch of spices and pepper. Lighter colored tree fruit join the darker berries from the nosing. Viscosity, salinity and a balanced, round sensation on the palate. Ripe agave claiming its place in the sun. Aged for 13-14 months; a near perfect marriage of barrel influences and agave.

tasting at the cellar cabo 9/30/23 small pours and bottle was just opened so i want to revisit. Nose really enjoyed. fruity Palate good sweet agave citrus a little pepper some heat Finish good

Perfume aroma with flavors of spice, cherry, and slight tannic finish. Pricey. It’s good, but I’ll pick the Blanco or Repo first.

Nose cooked agave oak. Peppermint GF says cotton candy :) Taste cooked agave, saltines. Mild menthol. Finish medium with medium pepper. Interesting I find the repo has less pepper.

Lot: 1 View: a greenish yellow, straw, golden, coppery. Freshly served; Aroma: lots of wood, minerality, sweetness and astringency, a little herbal, vanilla, copper. Flavor: herbal, much more than expected from an añejo. Wood, light vanilla, minerality, wood astringency. Sweetness and cooked agave. Very nice. I let it oxygenate for 15 minutes to allow it to open. Aroma: didn't change much. But it's definitely enjoyable. Flavor: It definitely opened towards the sweet without losing the rest of its qualities. Aftertaste: light and pleasant towards citrus tones of orange and black pepper.

Lots of sweet, dark fruit on the nose, as well as pineapple, grape and dark cherries. On the pallet, sweet, roasted agave, dark fruit, plums, and cherries, light, vanilla, and baking spices. This is a Lovely Añejo.
