NOM # 1509 2007 Mexican tax stamp Aroma: Vanilla and nutmeg laced fruitiness. A sharp mineral note with a dusty earthy quality. Some floral presence. Flavor: Bitter almond on entrance. Sweet and creamy, spicy and peppery mid palate. A touch of musty bitterness. Some pleasing fruit undertones. The cinnamon and clove spiciness has some kick.

Tons of agave on the nose. Hints of citrus, caramel, it’s bright and punchy. Oak and cooked agave upfront, quickly transitions into pepper... a little light in the body. Nice heat that sits on the back of the tongue with a mildly complex finish.

Served in a Riedel. Nose is cut agave, wet grass and mint, a really pleasant surprise. Mouth is vegetal, mellow and soft, a little pear and finishes with white pepper. Moderately complex finish, nice lingering heat on the back of throat. This has to be one of the finest bargain blancos I’ve had.

This is the export version at 40% abv. Organic and kosher. Agaves trimmed close. Open air fermentation in stainless steel vats. MSRP $50 Glass: Crystal clear, coats the glass and hangs, descending very slowly. Aroma: Bold fresh agave with white pepper, mint, vegetal grassy notes and a touch of jalapeno. Excellent. Entry: Smooth and oily with a touch of white pepper. Lovely. Flavor: Cooked agave featuring a hint of butter; apple, white and black pepper; a hint of grass; a lemon citrus acidity that presents toward the flavor of melon; and a touch of mineral water. Excellent. Finish: Long, flavorful and moist with moderate pepper. Excellent. Conclusion: A gorgeous profile from the highlands of Atotonilco with no production defects to be found. Coupled with El Consuelo’s commitment to organic farming, social responsibility, and community development, this is a must-have. This is an excellent value due to its high quality and organic agave.
