NOM 1580 Aroma has quite a bit of barrel with vanilla and caramel showing heavily. There is also a bit of fruit - cherry and pear. As with the blanco, the consistency is thin but the flavor is strongly sweet upfront followed by some nice pepper and spice. The finish is medium. A surprising step up from the blanco. 7/24/2015
NOM 1580 A briny, sour aroma that smells almost like some type of candy. There may be a bit of agave in the aroma but that could just be wishful thinking. After the aroma, the taste is surprisingly decent. The consistency is a bit watery but the flavor has peppermint, grass and a bit of agave. The finish is short to medium. 7/24/2015
There's a lot of sweet baked agave here with aroma of celery. I love tequila with celery aromas! Feels nice in the mouth, too.
There is a very strong pine aroma in this tequila.
This sample is from NOM 1079...at first whiff, the nose is fruity with a nice note of cooked agave, but it dissipates very fast. The taste is nice, with a creamy texture. While there is not any bitterness or bad flavors, but the complexity rates a 2 on a scale of 1-10. The finish fades super fast, so it doesn't do anything for me, but I think this is one of the best "starter tequilas" on the market. But then again, I am a big fan of NOM 1079 (R.I.P), and the stuff from the new distillery will be different than this...
NOM 1580 Aroma of sweet, burnt wood with vanilla following. The flavor is extremely sweet and tastes of cooked agave with very little spice. For an añejo, this tequila is very one-dimensional. The finish is short. 7/24/2015
