Nose: Caramel and chocolate come through first, giving it a dessert like sweetness that’s immediately inviting. Cooked agave comes next - followed by an earthy, vegetal savoriness that cuts right through the sweetness, keeping it balanced. A hint of musty oak from the pipón barrels adds an old world character that’s really intriguing. Palate & Mouthfeel: Interestingly, the oak is more pronounced on the nose than the palate. What really shines here is the agave - it’s bright, bold, and front and center. Backed up by rich notes of cooked sugars- think caramel and crème brûlée. The floral hints from the nose carry over gently, and that chocolate note transforms into more of a bitter cacao, which adds great contrast. A lively peppery kick brings in that classic high proof heat. Finish: There’s definitely a bit of ethanol burn on the finish as you’d expect from a high proof, but it’s well placed. It cuts through the sweetness and rounds things out without overwhelming. The balance here is key. Final Thoughts: Yum. Seriously.
