This Siempre profile is definitely for me one of their most intriguing and complex so far from their latest Rebel cask release. Prominent notes are vanilla, almond, baking spices, caramelized apple, somewhat green pineapple sensation (might be the acidic sensation from the grape), anise, clove, spearmint, mint, white pepper and ends with a subtle lactic nuance. Love what Siempre is doing with their Rebel cask program. This is definitely my favorite Rebel Cask Reposado.

I love what Siempre is doing here. Take Supremo blanco which is already tahona crushed and fermented with fibers to deliver a punch of flavor, and age it in a variety of barrels to produce unique Reposados. The Supremo is earthy and briney to begin with, so the Reposados take that on in a way that’s fairly different from most. On this one one picking up wet earth, mushroom funk, vegetal, cinnamon spice, and agave.

This puppy was interesting. On the nose you get lots of cooked agave mingled with honey, butter, dried apricot, and a little beeswax. Palate followed but with less butter and more butterscotch, a hint of cinnamon, and fresh toffee with caramel. Super long finish.

Wow, agave nose but with a twist…..gotta be the Sauterne barrel, sweet fruity aromas layered on the agave. Taste is most pleasant with balance of sweet and spice. Finish is sweet from the Sauternes and seem short, but then the agave spice kicks in and lingers
