Very unique single barrel, this one from liquor lineup. Not sure I could describe the nose or palate but not the profile for me personally.

This Siempre profile is definitely for me one of their most intriguing and complex so far from their latest Rebel cask release. Prominent notes are vanilla, almond, baking spices, caramelized apple, somewhat green pineapple sensation (might be the acidic sensation from the grape), anise, clove, spearmint, mint, white pepper and ends with a subtle lactic nuance. Love what Siempre is doing with their Rebel cask program. This is definitely my favorite Rebel Cask Reposado.

I love what Siempre is doing here. Take Supremo blanco which is already tahona crushed and fermented with fibers to deliver a punch of flavor, and age it in a variety of barrels to produce unique Reposados. The Supremo is earthy and briney to begin with, so the Reposados take that on in a way that’s fairly different from most. On this one one picking up wet earth, mushroom funk, vegetal, cinnamon spice, and agave.

This is a good reposado. But the Sauternes barrels definitely adds a unique element to both the aroma and flavor. On the nose I pick up on the agave and the barrel notes which is somewhat sweet and fruity. There is a slight funk but in a good way. The color is a little darker even though it spent five months in the barrel. On taste I quickly pick up on some cinnamon, vanilla, agave, maybe even a little butter. It has a nice mouthfeel and medium finish. Probably not favorite reposado but it is good and definitely worth a try.

This puppy was interesting. On the nose you get lots of cooked agave mingled with honey, butter, dried apricot, and a little beeswax. Palate followed but with less butter and more butterscotch, a hint of cinnamon, and fresh toffee with caramel. Super long finish.

Bottle: Barrel No 6, Batch No L-R30072210, Bottle 2026/2040, Date 10/28/2022 Appearance: Marigold Nose: Cooked agave, mushroom, wet cardboard, lactic, brine/salinity, fruity, raspberry, pear, Parmesan cheese, almond, dried fruit, fig, golden raisin, honey, oak, barrel spice, cinnamon, allspice, dry earth, yeast/dough, and olive…this is my kind of funky Palate: Cooked agave, mushroom, wet cardboard, brine/salinity, olive, lactic, yeast/dough, honey, oak, cinnamon, butter, dry earth, almond, barrel spice, Parmesan cheese, fruity, fig, apricot, green apple, golden raisin, ginger, and black pepper…just as funky and enjoyable as the nose Finish: Mushroom, cinnamon, brine/salinity, honey, and lactic…short, dry, funky, and wine-like Overall: This is really great. While the uniqueness of this tequila cannot be understated, I found the funk and unexpected combination of aromas/flavors to be pleasantly balanced. I’m very excited to see if the other expressions in Siempre’s single barrel program are as interesting as this one.

Wow, agave nose but with a twist…..gotta be the Sauterne barrel, sweet fruity aromas layered on the agave. Taste is most pleasant with balance of sweet and spice. Finish is sweet from the Sauternes and seem short, but then the agave spice kicks in and lingers
