At the Bar: 3/2025 Rating 83 The profile opens with notes of anise and oak, supported by sarsaparilla, minerality, and a thread of butterscotch. Brine and alcohol are present but don’t overwhelm, and the cooked agave’s sweet potato essence brings a grounding sweetness. Update – 6/2025 at Home: With more time and focus, the palate reveals added dimension with peppermint freshness, fleeting hints of red apple, and a sweet banana softness rounding out the agave’s sweet potato essence core. The finish is light but satisfying, with clinging cooked agave, a saline brine note, faint salt, and a clean thread of petrichor lingering on the tongue.
