The high pressure autoclave holds this back as this is a bit astringent intially in the mouth. Once that fades a bit some natural sweetness that was hidden behind comes out and fades to a nice mid tongue buzz.
Aroma: Fresh herbs and citrus aromas, light scent of sweet agave, and pickles. Palate: Cooked sweet agave, white pepper, earth, mineral, zested citrus flavor. Little astringent on the tongue. Finish: short, mineral, botanical.

Aroma is citrusy herbal with green trees and minerality. It’s nice. On the palate it’s agave- olives- green grass- minerals- wet earth. Finish is peppery agave with a pepper silkiness. Last nicely- short to medium agave flavor continues.
Nose: herbal, citrus, minerally, alcohol, some cooked agave. Palate: some agave, celery, citrus, hot finish. Not bad not amazing either.
You can sip it, but Lou thinks it's best as a mixer tequila.
