TMM Blind Tasting:2025 The aroma opens with a burst of lemon and lime citrus, joined by ripe pineapple, strawberry, spearmint, and a light floral lift. On the palate, cooked agave, butteriness, subtle berry and floral notes, with a touch of anise. The finish is gentle and soft, with lingering butter, faint citrus, floral tones, and a light thread of cooked agave.
Blind TMM tasting: Nice earthy agave aromas that follow with similar flavors including some minty notes. Nice medium tingle that feels just slightly overproof. (Surprised I rated this so much higher than the high proof. Will need to revisit both).
Pleasant aroma. Some agave, pepper, fruit. Taste is also nice, finish is a bit light. I gave this only a 5 for value.

Slight agave on the nose, roast agave in the mouth with a fair amount of sweetness. Short buzzy finish.
Tried this for the first time at Grover’s event in Rhode Island. Awesome nose with lots of fresh citrus like grapefruit and lemon, cooked agave and a hint of mint. Fantastic earthy taste with a ton of cooked agave sweetness and some olive brine. Very oily mouthfeel. A good finish not overly complex. It’s pricey but it’s definitely not just a fancy bottle and package

Tasted at Sip Tequila Fest By far my favorite aspect of this blanco is the nose. It is incredibly expressive with notes of lime, fresh grapefruit, orange peel, herbaceous notes like rosemary/mint/anise, and cooked agave. On the palate I found brine, citrus, black pepper, white pepper, more herbaceous notes, subtle fruity elements & ample amounts of cooked agave. The finish is exceptional. This expression from Alto Canto was my favorite unaged tequila I tasted at Sip Tequila Fest. I ended up coming home with a bottle. More notes to come!
Earth and mint flavors and a rich mouthfeel. Slight floral aroma with minerals. Thick mouthfeel.
Alto Canto comes to us from a single brand NOM, NOM1636, in the Sierra del Tigre mountains (9000 ft elevation) outside of Guadalajara. They use organic agave, mountain spring water, brick ovens, tahona, wild malolactic fermentation in wood vats with fibers, copper stills, and then rested for 25 days in a white oak container. The nose is very enjoyable. It’s mildly dense buttery cooked agave with hints of malolactic fermentation and some nice minerality and muted peppers. A tad of agave sweetness punches through as does some citrus and honeysuckle. The agave and minerals are the most pronounced aromas. It’s not overly complex but the aromas that are present are clean and enjoyable. On my first sip, I get the cooked agave, minerals, and some white pepper. On the second sip, the agave is more buttery and the pepper is less pronounced. On subsequent sips I get minerals, a hint of a light vegetal note, and a touch of natural vanilla and cinnamon. It has a medium body and finish. Overall this is a high-quality blanco tequila that I’d be happy to sip on daily.
Aroma: Dry and dusty nose. Metallic minerals. Lime zest. Subtle vegetal note, cooked cauliflower? Sweet candied agave. Lightly fragranced florals. Flavor: Peppery entrance that lingers. Medium + body. Hint of vanilla to the agave sweetness. Salinity. Lacks some of the complexity of the Still Strength, but a pleasant profile.

Tasting high brix level agave, white sugar, mint, mineral, vanilla, Flavor: sweet agave bomb, mineral, white sugar, mint Pallet: medium/long, leaves sweetness on the tongue, clean, flavor stays a while, easy to drink. When I smelt this, I smiled. It’s all that I love in a tequila. It’s not fancy or flashy, it’s just delicious. I know they’re not re-inventing the wheel making it, but they are making good tequila the right way. YUM!
Pleasant agave and flor aroma. On the palate sweet cooked agave, vegetal, and a strong pepper finish.

Very smooth, vegetal, long finish.
Great Highlands Tequila. I enjoy on ice as a summer sip. Buttery Smooth, light bodied, balanced fruit, mineral, fermentation. I only drink tequila using Tahona extraction and additive free. Using Mountain Springwater and open air fermentation create a unique expression of a highlands tequila. Alto is like drinking a great Pinot Noir compared to Cascahuin Tahona Blanco which is like a full bodied Brunello. I also compared Alto to Forteleza, G4 Madeira, and Primo 1861. It will have a full time place in my bar as an equal among great tequilas. I picked up a case at Community Wines and Spirits in NYC. Alto Canto will quickly become a top 10 distillery.
This is on the top 10 of tequilas in my book. I tried in New York at Covacha Mexican restaurant. I would say it is like a combo of Fortaleza and cascahuin. My rating would be higher if there was a way to purchase the bottle but the only place that has this tequila is Covacha and they won't sell the bottle at any cost. I tried. Edit in late June to rating due to availability online for purchase. Also bought the still strength and reposado.

Aroma/Taste: The aroma opens with wet cement and limestone, accompanied by citrus notes of lime and lemon, and undertones of stone fruit like cherry. The nose also reveals cooked agave and anise, with a subtle trace of dill. On the palate, the taste is characterized by sweet cooked agave, black tea, and the soft spice of white pepper. Finish: The finish is well balanced, featuring hints of fresh cut grass, cola, mint, sweet agave, and licorice. It's a very good finish with a lingering sweetness that hangs around for a while. Overall: When tasted blind, this tequila stands out as another well-balanced blanco in this tasting. It's enjoyable neat and would also be excellent for elevating a cocktail.
