In this tequila tasting, we're exploring a mix of smells and tastes, mostly influenced by the barrel. When you smell it, you'll notice hints of caramel and oak first, with a bit of black pepper and baking spice, like you might find in a well-aged whiskey. The smell gets even more interesting with subtle touches of barrel spice, adding depth and richness. When you take a sip, you'll taste flavors like vanilla and cinnamon, along with a hint of allspice. But the tequila tastes a lot like whiskey, with strong flavors of sawdust and wood shavings from aging in the barrel. This gives it a bold, woodsy taste, but it kind of hides the natural agave flavor. Overall, this tequila is all about the barrel. If you're into whiskey-like tequilas with lots of depth, you'll probably enjoy it. But if you're looking for more of that pure agave taste, you might want to try something else that balances the barrel and the agave flavors better.

This tequila offers an aroma with distinct mineral, herbaceous, and grassy notes, complemented by a subtle hint of orange peel and a touch of acetone. On the palate, the flavor profile is a blend of freshness and crispness, featuring green fruits like pear and melon. The raw agave essence comes through, accompanied by a subtle bitterness, once again the minerality comes very noticeable that makes me think about limestone. It leaves you an enjoyable fruity/minty lingering sensation

Mexican 38% abv. versión, lote: CVA3323, bottled on 14-12-2023, tasted on 11-18-24. Color: dark yellow to light brown. Aroma: light acidity, hint of wood note, light caramel, hint of sourness, hint of drying sensation, light earthiness, after 20 minutes in the glass a hint of cooked agave aroma emerges. Wood note becomes more noticeable as time goes by and is slightly astringent. Light vanilla. Palate: confirms aromas perceived, wood note is quite dominating on the palate and ends a tad bitter. Finish is medium to medium long, hint of cooked agave, light caramel and vanilla note with slightly dominating wood note persists, ends slightly dry.

Mexican 38% abv. versión, lote: CVB2923, bottled on 08-12-2023, tasted on 7-6-24. Aroma: light sweet cooked agave, light acidity, hint of earthiness, hint of citrus, sprite sensation, light minerality, after 20 minutes in the glass the agave note becomes sweeter and light white floral aromas emerge, reminds me of Calle 23 Criollo, but this tequila is rounder and softer and not as aromatic as the Criollo maybe due to lower abv. Palate: confirms aromas perceived, good sweet sour and citrus balance similar to grapefruit, light white floral aromas through my retronasal. Agave note is sweeter on the palate. Light resinous sweetness. Finish is medium to medium long, light sweet cooked agave, hint of earthiness, light citrus with light white floral aromas and light resinous sweetness persist.
