The aroma wafts with brine, earthy cooked agave, and green vegetal notes reminiscent of celery and green pepper. Hints of candied yam and vanilla emerge, balanced by ethyl undertones, minerality, and a touch of mint. On the palate, the cooked agave shines, immediately met with a forward brine character that dominates. Green vegetal notes and ethyl intermingle with soft vanilla, underpinned by a distinct minerality. Herbal nuances of sage, cooling spearmint pair with a subtle sweetness of sugar cane, though it feels more understated in this newer iteration. The finish is spicy and minty, tapering off with lingering notes of yam. This iteration doesn’t taste too different from the previous. More brine forward with vegetal notes and less pop of sugar cane sweetness.
